Carol Ireton-Jones, PhD, RDN, LD, CNSC, FAND, FASPEN

Complex GI Issues and the Latest in Nutrition Intervention


Dr. Carol Ireton-Jones received her PhD and Master’s degree in Nutrition from Texas
Woman’s University. Her undergraduate degree in Nutrition and Dietetics came from
Texas Tech University where she also received her clinical training. She developed The
Ireton-Jones equations for estimating energy requirements in hospitalized patients and these are widely used nationally and internationally.

Dr. Ireton-Jones provides out-patient nutrition care for people with GI disorders including IBS, gastroparesis and IBD, as well as those who require home parenteral and enteral nutrition. She continues to measure metabolic rate as an important part of determining individual energy expenditure in many diverse types of people. She has lectured extensively nationally and internationally on a variety of nutrition topics and has over 175 peer reviewed papers and abstracts and 34 book chapters.

Recent honors and awards include the 2022 Award for Excellence in Entrepreneurial
Practice from the Academy of Nutrition and Dietetics and the 2023 Chancellor’s Alumni Excellence Award from Texas Woman’s University.She recently completed the second edition of Outpatient Nutrition Care: GI, Metabolic, and Home Nutrition Support in November 2023 from CRC Press and available on Amazon.com. Balancing both evidence-based nutrition with sensible and practical applications is her strong point!

Matthew Landry, PhD, RDN, DipACLM, FAND, FAHA

Beyond the Hype: Examining the Scientific Evidence for the Mediterranean Diet | The What, Why, and How around Plant-Based Diets

 

Matthew Landry is an Assistant Professor in the Department of Population Health and Disease Prevention at the University of California, Irvine. Matthew received his Bachelor’s degree in Nutrition and Food Sciences from Louisiana State University and completed his doctoral degree in Nutritional Sciences and dietetic internship from The University of Texas at Austin. He then completed a postdoctoral research fellowship in cardiovascular disease prevention at the Stanford University Prevention Research Center. In addition to being a registered dietitian, he is a Lifestyle Medicine Professional from the American College of Lifestyle Medicine. His research focuses on promoting food and nutrition security and preserving cardiovascular health across the lifespan. His work has earned him numerous accolades including the California Academy of Nutrition and Dietetics Recognized Young Dietitian of the Year Award and a feature in Today’s Dietitian Magazine’s 14th Annual Showcase of 10 RDs Who Are Making a Difference. He is a Fellow of the Academy of Nutrition and Dietetics and the American Heart Association. 

Katie Robinson

Katie Robinson, PhD, MPH, RD, LD, CNSC

Diabetes and Nutrition Management: Challenges and Opportunities 

Katie Robinson is a Medical Science Liaison in Scientific and Medical Affairs at Abbott Nutrition specializing in Adult Therapeutics. Prior to joining Abbott, she conducted research on the impact of nutrition and genetics on outcomes of behavioral and surgical weight loss interventions.

Dr. Robinson completed her bachelor’s degree in Dietetics at Iowa State University and her dietetic internship at the University of Illinois in Urbana-Champaign (UIUC). She earned her Master of Public Health and PhD in Nutritional Sciences in the Illinois Transdisciplinary Obesity Prevention Program at UIUC. Her graduate research sought to understand how preoperative dietary interventions and individual genetic variation contribute to improved insulin sensitivity following bariatric surgery. During her time at UIUC, she taught multiple undergraduate and graduate courses and assisted with coordinating the undergraduate didactic program in dietetics.

Following graduate school, she completed postdoctoral training at the University of Iowa in the Fraternal Order of the Eagles Diabetes Research Center. Dr. Robinson has numerous publications in peer-reviewed journals and has presented her research at national and international conferences.

Lenora Goodman, MPH, RDN

“Everyone as a community should help.” Identifying and Addressing Social Determinants of Child Health Behaviors 

Lenora is a PhD student in social behavioral epidemiology at the University Of Minnesota School Of Public Health. Lenora obtained her Bachelor’s degree in Dietetics from the University of Kentucky, where she completed a coordinated dietetic internship program, and her Master of Public Health in Nutritional Sciences from the University of Michigan. Before returning to school, she worked as a registered dietitian for the WIC program and as a clinical dietitian in pediatric endocrinology in Detroit, Michigan. Lenora is interested in improving best public health and clinical practice when providing care to children and families from historically marginalized backgrounds. Her research focuses on prevention of nutrition-related chronic disease, including disordered eating and cardiovascular disease, and mental health promotion from a health equity lens.

Cat Rudolph, MS, RD, LDN

A Collaborative Exploration of Public Trust and the Dietetics Profession | Policy Perspectives: Engaging in Advocacy to Elevate RDN Impact

Catherine (“Cat”) Rudolph is a registered dietitian and graduate research assistant for the Nutrition and Aging Resource Center. In this role, she designs and conducts research to evaluate the center’s programming efforts and promote the well-being of older adults. Cat is currently pursuing a Ph.D. in Nutritional Sciences, and graduate minor in political science at Iowa State University. She has previously received a Bachelor’s and Master’s degree in Diet and Exercise from Iowa State University, and completed a Dietetic Internship at Duke University Hospital before receiving her RDN credentials. Cat’s background experiences include community-based research, health education program development and evaluation, farmers’ market management, community food security initiatives, and oncology nutrition. In her volunteer time, she serves as the State Policy Representative for the Iowa Academy and Grassroots Organizer for the Hunger and Environmental Nutrition Dietetic Practice Group of the Academy.

Nicole Kling, MS

A Collaborative Exploration of Public Trust and the Dietetics Profession

Nicole is a PhD Candidate in Nutritional Science at Iowa State University. Prior to her PhD, she earned her B.S. and M.S. in Diet and Exercise, a concurrent degree program that combined course requirements for the Didactic Program in Dietetics (DPD) with the American College of Sports Medicine (ACSM) exercise physiologist level of certification. Her primary interest is exploring the intersection of environmental sustainability and human health and diet. There is strong evidence suggesting that dietary patterns can be simultaneously beneficial for the environment and human health; however, how do we promote adoption of these dietary patterns? Through her current work, she explores the promotion of healthy diets through studies on trust in agri-food related sciences, brief action planning, and social media. Beyond research, Nicole explores these interests through her involvement in the Hunger and Environmental Nutrition (HEN) Dietetic Practice Group. Following her PhD, Nicole will complete the dietetic internship and complete the national exam to earn RD credentials.

Savannah Schultz is a graduate research assistant with ACL’s Nutrition and Aging Resource Center and long-term care dietitian. She is receiving her doctorate in Gerontology with a minor in public policy at Iowa State University and serves as Iowa Academy of Nutrition and Dietetics Inclusion, Diversity, Equity, and Access Chair. She specializes in equitable evaluation, policy analysis, and needs-based programming. In her free time, Savannah enjoys sewing, backpacking and running with her small dog.

Barbie Boules, RDN is a registered dietitian, certified health coach, and meditation teacher with 20+ years of experience, specializing in the unique needs of women over 40. In her practice she works as a private coach, community educator, passionate speaker, popular corporate wellness programmer, and respected dietetic intern preceptor. She’s had the privilege of guiding thousands of women around the country on their journey to better health, and creating vibrant corporate wellness programming for over 100 companies around the world.

Barbie takes an evidence-based, whole person approach, emphasizing nourishing foods, quality sleep, daily movement, and developing solid stress skills. She’s passionate about a mindful approach to healthy aging, prioritizing cognitive and cardiometabolic fitness, and Alzheimer’s disease prevention.

Andie Lee Gonzalez, PhD, MPH, RDN, LD, FAND

Pediatric Obesity: A Review of the Current Guidelines

Andie Lee Gonzalez serves as a US Pediatric Medical Science Liaison for Abbott Nutrition a division of Abbott. In this role, she provides over 80 continuing professional education presentations annually to health care professionals. She is also an adjunct professor at South Texas Community College. Dr. Gonzalez is involved in professional leadership at the local, state, and national levels. She has served on the Latinos and Hispanics in Dietetics and Nutrition executive committee in various roles. In 2019 she completed the Academy of Nutrition and Dietetics Leadership Institute. Her research interests include pediatrics, health equity, leadership and a focus on Hispanic/Latino health. In 2023 she was lead author for a publication focused on promoting health equity for the Hispanic population through improved access to malnutrition screening and intervention. Dr. Gonzalez earned a bachelor's degree in Dietetics and Nutrition, a Master of Public Health (MPH) and clinical training at Michigan State University (MSU) in East Lansing, Michigan and completed her PhD in Organizational Leadership from Our Lady of the Lake University in San Antonio, Texas.

Kaitlyn Scheuermann, MPP-D, RDN, LD

Kaitlyn Scheuermann, MPP-D, RDN, LD is currently the Public Policy Coordinator for the Iowa Academy of Nutrition and Dietetics. She works as the Registered Dietitian for the Waukee Community School District since 2016. In her role, she develops menus for all K-12 buildings, assists families with special diet accommodations, facilitates Farm to School programming, and upholds the local wellness policy. Kaitlyn holds Bachelor’s degrees in Dietetics and Family and Consumer Sciences Education and a Masters of Professional Practice in Dietetics degree, all from Iowa State University. In addition to her professional love of gardening, she’s a Master Gardener and owns a 1/4 acre donation garden where produce from the garden is donated to her local pantry in honor of her son, Noah.

Tina Bauermeister, MS, RDN, LD, CDCES

Tina has been a member of the Iowa Academy for many years. She is a former editor of the Simplified Diet Manual, 13th ed; former Meeting Chair, and now the Consumer Protection Liaison on the Public Policy Team. Currently Tina works at a critical access hospital in rural Iowa and wears many hats as the food service director and diabetes educator for inpatients and outpatients. Tina subs at the local YMCA fitness classes when possible, and enjoys time with her husband, two boys, and two corgis in the Okoboji area.

Lyndi Buckingham-Schutt, PhD, RDN

Policy Perspectives: Engaging in Advocacy to Elevate RDN Impact

In 2022, Lyndi Buckingham-Schutt joined Iowa State University as an Assistant Professor in the Food Science and Human Nutrition Department and a Human Science Extension and Outreach State Specialist in Food and Health. Lyndi’s work and research focuses on research and evidence-based policy, systems, and environmental change approaches to improve food and nutrition systems that support access to healthy food, sustainable development, and food equity.    

Prior to her role at Iowa State University, Lyndi was the Director of Wellness and Nutrition Policy at The Harkin Institute at Drake University, where she was responsible for developing and implementing The Harkin Institute’s wellness and nutrition policy agenda, research projects, and educational outreach. From 2013-2017 Lyndi was an USDA Fellow for Childhood Obesity Prevention at Iowa State University and studied the effect of a physical activity, nutrition, and behavioral intervention during pregnancy to improve maternal and fetal outcomes. 

Lyndi received a BA in Exercise Science from St. Olaf College, a BS in Dietetics from Iowa State University, and a PhD in Interdisciplinary Nutritional Science from Iowa State University. Outside of Iowa State, Lyndi is the past-chair of the Academy of Nutrition and Dietetics Legislative and Public Policy Committee, and a member of Above and Beyond Cancer board and Iowa ACE’s 360 board.

Joseph Jones, PhD, MPA, IOM

Policy Perspectives: Engaging in Advocacy to Elevate RDN Impact

Dr. Joseph Jones is chief of staff to the president at Des Moines University, a medicine and health sciences university in Des Moines, Iowa. Most recently he served as executive director for The Harkin Institute for Public Policy & Citizen Engagement. 

Before joining The Harkin Institute in 2016, Joseph was Senior Vice President of Government Relations and Public Policy for the Greater Des Moines Partnership. Prior to moving back to Iowa, Joseph served as a Legislative Assistant to Senator Harkin in Washington, D.C. In addition to having worked in several capacities in the public sector including for Governor Tom Vilsack and Lt. Gov. Sally Pederson and the Iowa Finance Authority, he has also worked for not-for-profit organizations like Creative Visions. His election work has included serving as the Iowa political director for the 2008 Obama campaign for president and as a past political director for the Iowa Democratic Party.

Joseph is a graduate of the United States Military Academy Preparatory School and earned his BBA in economics from Loyola University New Orleans. He earned a Master of Public Administration degree in public policy and a certificate in Non-Profit Leadership and Administration from Drake University. In 2014, he was presented Drake’s Distinguished MPA Alumnus Award. He is a graduate of Air Command and Staff College and is also a Fellow of the Truman National Security Project. Joseph also received his PhD from Drake where his research focused on the intersection of civics, experiential learning, and access. In 2018, he was the Executive in Residence at the University of Iowa’s College of Public Health, and he also serves on the faculty of the U.S. Chamber of Commerce’s Institute of Organization Management.

Maddy started working with Eide • Walton in 2020 as the Iowa Academy Legislative Associate. Maddy is a registered lobbyist for the firm's clients. Maddy is a native of Johnston, Iowa. She graduated With Distinction from the University of Iowa where she received Bachelors of Science degrees in both Environmental Science and Public Health. Maddy worked for four years as a research supervisor for the Iowa Public Policy Center. She has been involved in other policy work including being appointed to the Iowa City Climate Action Commission, and writing for the Iowa Policy Research Organization. She was also chosen as a representative to work with the Iowa Environmental Council, where she attended board meetings and served on the policy subcommittee. In her spare time Maddy loves to run, go hiking, and travel. She frequently travels to the United Kingdom to visit family and recently spent some time exploring New Zealand.

Sukirth M. Ganesan, DDS, PhD, MPH

From Waistline to the Gumline: Exploring the Interplay of Obesity, Oral Microbiome, and Diet

Associate Professor and the Director of the Advanced Department of Periodontics at the University of Iowa College of Dentistry and Dental Clinics. He earned his PhD and certificate in Periodontics from the Ohio State University, along with a Master’s in Public Health focusing on Health Policy and Administration from the University of Illinois, Chicago. Prior to his tenure at the University of Iowa, Dr. Ganesan completed a post-doctoral fellowship at the National Institutes of Health, Bethesda. He is a Fellow of the International College of Dentists, the American College of Dentists, the ADEA Leadership Institute, and a member of the OKU Honor Society. Dr. Ganesan has received numerous awards from the AAP and AAP Foundation and serves on committees for both organizations and the AADOCR, as well as on the Board of the Midwest Society of Periodontology.

In addition to delivering patient care and holding a permit for moderate conscious sedation, Dr. Ganesan is actively engaged in teaching periodontal residents and leading a funded research program. His research explores the intricate connections between the human microbiome, oral health, and systemic diseases, with a particular focus on host-microbial interactions in Obesity and Metabolic Syndrome, and in pathogenesis of periimplantitis. Dr. Ganesan has secured funding from prestigious sources such as the Osteology Foundation, Diabetes Center Research grant, American Cancer Society Young Investigator grant, NIH NIDCR, and Carver Foundation. He advocates for a holistic approach to healthcare, integrating clinical, research, and public health expertise.

Lori Winborn, MPH, RDN, LD

Outpatient bariatric surgery dietitian at University of Iowa Health Care. Lori has been working with this team for nearly 10 years, educating patients not only about the surgery, but also how to incorporate a healthy lifestyle and how to make the appropriate changes in the diet to avoid nutrient deficiencies post operation. She is also an adjunct professor in the Master of Clinical Nutrition program at the University of Iowa, Carver College of Medicine. Lori has served numerous roles with the Iowa Academy of Nutrition and Dietetics, to include President, Public Policy Coordinator and Awards Chair. It has long been her goal to present to this group and she is appreciative to be able to speak to you all today.

Jocelyn Evans, RD, LD, CSG

Impact of the RD in the Long-Term Care Setting 

Jocelyn is the owner of J. Evans Nutrition Consulting. She leads a team of 16 consultants that provide services to long term care communities around Iowa, Nebraska and Minnesota. Her team also works with the Nutrition and Aging Resource Center that serve as consultants doing various roles such as assisting with innovations in nutrition grantee projects, creating written materials and webinars, and assisting the team with administrative duties and staff relief. Jocelyn started her career as a retail dietitian at Hy-Vee before transitioning to working in long-term care communities. Jocelyn is certified in Gerontological Nutrition. She also is certified as a ServSafe proctor and instructor as well as certified in QAPI management. She has experience with creating, reviewing and approving multiple menus for congregate and home-delivered meals, in addition to work in providing nutrition counseling and education to older adults. Jocelyn lives on a small farm near Huxley and enjoys spending her time with her husband Jim and her 3 children.

Stephanie Johnson, RD, LD

Impact of the RD in the Long-Term Care Setting 

Stephanie is a 2003 graduate of Iowa State University and has been the owner of Sunset Nutrition Consulting, LLC since 2015. She has worked in the long-term care setting since 2011. When not advocating for our profession and her residents, she spends time with her husband in Adel, IA running after their two active boys! She loves cycling, yoga, tennis, reading, thrifting, and spending time with her sisters.

Lauren Fleck is a registered dietitian, yoga teacher, and advocate for mental wellness, leveraging her expertise in functional medicine to address the root cause of well-being concerns. She has a passion for helping people do more of what they love while feeling their best. As a functional dietitian, speaker, and consultant with Lauren Fleck LLC, Lauren inspires others to be changemakers in their own lives through the power of nutrition, movement, and other lifestyle factors. 

She understands the struggles of burnout and overwhelm firsthand. Having been in that place herself, she has dedicated over a decade of personal and professional experience to discovering effective ways to nourish the body and support mental well-being.
